When you do cook with wine, make sure to savor as much of it as possible with this in mind (I smile to recall her telling the story ...): A neighbor used a bottle of wine given them as a gift as an ingredient in her spaghetti sauce. Considering she was having a large family gathering, she used the entire bottle with just a small taste for herself. She loved the taste and end result in the sauce so much that she took the bottle to our local wine connoisseur in a small liquor store in town. He knew the wine immediately, but questioned that she wanted to buy a case ... considering the wine given to her and her husband as a gift was (totally unbeknownst to her) over $100.00 per bottle.
